A perfect brunch 😊

I found this dish in a tiny cafe in Greenwich Village in New York and I simply have to share it.


  • Lime, juice of 
  • Plain rice, pre-boiled 
  • Tomatoes, chopped 
  • Parsley, diced 
  • Black beans, soaked until soft 
  • Red onion, chopped 
  • Avocado, sliced 
  • Eggs, poached 
  • Bacon, chopped and fried
  • Thinly sliced carrots 
  • Sweetcorn 
  • Optional – Ready salsa verde (or make your own!)


Firstly make a salsa by mixing the tomatoes, parsley and red onion. Separately fry the bacon in a little butter or margarine. Heat up the rice if pre-cooked whilst poaching the eggs in some salted boiling water. Use a poacher if you prefer. Mix the salsa with the rice, bacon, carrots, sweetcorn and black beans and add a squeeze of lime juice. When ready place the poached eggs and avocado on top of the mixed rice and serve when ready. Drizzle with salsa verde if preferred.
